EDINBURG TX – The Edinburg Economic Development Corporation officially unveiled 5×5 Brewing Co. as the partner behind “Project 25” during a press conference Monday at 517 W. McIntyre St. The project represents a combined investment of $2.5 million and is expected to create 20 primary jobs.

The 8,000-square-foot facility will include a brew room, restaurant dining area, taproom and bar, and outdoor patio, along with live entertainment. Construction is expected to begin in December 2026, with an anticipated opening in fall 2027.

The EEDC will invest $1.7 million in the project, with a private-sector contribution of more than $700,000. The facility will remain under EEDC ownership, with 5×5 Brewing Co. leasing the space for its operations.

“This partnership reflects our Board’s commitment to investments that create jobs, support business growth, and bring lasting value to Edinburg,” said Richard Gonzales, president of the EEDC Board of Directors. “By pairing an EEDC-owned facility with private-sector investment, we are putting this property to work and creating new opportunities for our community.”

The announcement also highlights Edinburg’s participation as an Emerging Brewscape in the Brew City, Texas program, launched in 2024 by the Texas Craft Brewers Guild to promote craft beer tourism and local economic development.

“This project is another step forward in our efforts to develop Midtown Edinburg, bringing together manufacturing, hospitality, and placemaking,” said Raudel Garza, executive director of the Edinburg EDC. “Building on destinations such as UTRGV, the ACE Center, the courthouse, and the amphitheater, 5×5 will add to the area’s activity and create more opportunities for people to gather, explore, and spend time in Midtown Edinburg.”

Mayor Omar Ochoa said the project reflects the city’s broader growth strategy.

“5×5 Brewing Co. choosing Edinburg shows the momentum our city has,” Ochoa said. “We are building a city where people want to spend their weekends, not just their workdays.”

George Rice, founder of 5×5 Brewing Co., said the brewery intends to become part of the local community.

“Our vision is to create a welcoming place where people can share a meal, enjoy locally brewed beer, listen to live music, and connect,” Rice said. “We look forward to becoming part of the Edinburg community.”

During the event, representatives revealed the 5×5 Brewing Co. logo and unveiled a rendering of the planned facility.
